What the Kitchen Builds

How passion can become competence, executive function, identity—and eventually something you have to learn to leave

The kid is at home.

Nobody has called them talented yet. There is no chef’s coat, no brigade, no Saturday-night service and certainly no Michelin star. Maybe somebody asks them to help make dinner. Maybe they start screwing around with a recipe because the original version looks boring. Maybe they discover that getting an onion properly browned is strangely satisfying.

Then something happens that adults routinely underestimate. The food is good. Not you’re such a wonderful helper good. Actually good. Someone takes another bite, and the kid notices.

I’m good at this.

That is not yet a passion singularity. It may not even be a passion. It is evidence.

So they cook again. They try something harder, screw it up, figure out why, and try again. The kitchen begins acquiring its own gravitational pull because competence is one hell of an engagement system. Eventually I’m good at cooking becomes something else.

I want to be a chef.

The proto-passion has been born. But wanting to become something and believing you actually can become it are not remotely the same cognitive event.

The professional kitchen is about to find out which one this is.

The Kitchen Tries to Kill the Dream

Home competence gets the kid through the door. Professional competence is something else.

At home, people waited for dinner. In a professional kitchen, dinner does not wait for you. The carrots need to be identical. The station needs to be ready. The knife needs to be exactly where your hand expects it to be, and somebody who has done this ten thousand times is standing nearby wondering why the hell you’re taking so long.

The proto-passion has met reality.

Good.

A passion singularity shouldn’t be born simply because a kid likes something. It needs evidence. The professional kitchen supplies that evidence ruthlessly. The young cook gets corrected, gets buried, and discovers how much they don’t know.

Then they come back.

Over time, prep they once struggled through becomes routine. A station that once overwhelmed them becomes manageable. Then comes the night when the tickets keep coming, something goes wrong, and instead of drowning, the cook recovers.

Another piece of evidence.

These small successes accumulate. The aspiring chef is continuously updating an internal model of what might be possible: Maybe I really can do this. The kitchen responds by making the test harder.

Eventually the accumulated evidence crosses a threshold.

I CAN be a chef.

That is different from wanting it. I want to be a chef describes a desired future. I CAN be a chef makes that future believable.

The passion singularity is born at I CAN.

Now it has to survive.

When the Mundane Shit Stops Being Mundane

Prep can be boring as hell. Nobody dreams about becoming a chef because they desperately want to peel vegetables for three hours.

Yet something strange can happen after I CAN. The onion is no longer merely an onion. The knife is no longer merely a knife. The station isn’t simply a collection of containers somebody has to fill before service.

They belong to becoming a chef.

The emotional value of the destination begins flowing backward into the mundane work required to reach it. That gives us a much more interesting hypothesis about ADHD passion than people with ADHD can hyperfocus on things they like.

The mature passion singularity may allow someone to become obsessive about things they don’t particularly like because those things have acquired meaning through their relationship to something they love. That’s how vegetable prep can become strangely satisfying. It’s also how an elite athlete can be training at five in the morning when getting out of bed at five in the morning isn’t intrinsically fascinating to anybody.

The workout isn’t the singularity.

What the workout serves is.

The person who supposedly cannot tolerate repetitive work has become extraordinarily particular about repetitive work. The work didn’t change.

Its meaning did.

What the Kitchen Demands

A professional kitchen does not politely request executive function.

It demands it.

The cook has to sequence work, inhibit shortcuts, anticipate problems and recover from errors while the environment keeps moving. At first, much of that executive architecture exists outside the young cook. Mise en place reduces working-memory demands. The station constrains behavior. The brigade distributes responsibility. Recipes and routines reduce decisions, while experienced cooks catch failures before the novice even recognizes them as failures.

The environment is lending the young cook executive structure.

Then repetition starts doing something. The cook stops merely following the structure and begins understanding why it exists. They recognize patterns earlier, prepare for problems that haven’t happened yet, and discover that ten minutes spent correctly before service can prevent thirty minutes of catastrophe during it.

Eventually they aren’t merely using the structure.

They’re generating it.

That is where the hypothesis of learned EF becomes interesting. It does not require claiming that ADHD disappeared, nor does it require pretending that executive function suddenly becomes equally available everywhere.

In fact, the opposite may happen. Executive control may become extraordinarily sophisticated inside the passion-linked compartment while remaining inconsistent outside it. A chef can coordinate a brutal Saturday-night service and forget something stupid on Sunday morning.

Those observations don’t cancel each other.

They tell us something about the compartment.

The Bridge

I watched a small version of this happen with a kid I’ll call Chris.

Chris was a talented athlete I was mentoring. He had experienced significant adversity and could be wildly impulsive. Playing pickup basketball, he would attack the ball immediately, trying to maul it away from me. When I invited him to play street hockey, he did exactly the same thing.

See ball. Attack ball.

The problem was that I was fifty-five years old with achy knees and could still go around him.

So I taught him to contain. Stay in front of the attacker. Don’t commit simply because you can see the ball. Wait long enough to understand what the other player is doing. When the opening appears, then attack the stick.

Our one-on-one games reinforced the lesson better than any lecture could. The drill rewarded creating a clean scoring chance rather than simply firing from anywhere, and the kids discovered that patiently forcing a turnover often produced the easiest goal. Now inhibition had a payoff.

Chris became obsessive about containment. The kid who had been one of the most impulsive players became one of the least impulsive defenders.

That was interesting.

What happened next was more interesting.

I asked Chris whether he had ever walked into the cafeteria, seen his friends talking, barged into the conversation cracking jokes, and watched the whole thing crash because he hadn’t bothered to figure out what everyone was talking about.

His response was immediate: Oh my God. All the time.

So I told him to play defense in the cafeteria. Walk in, contain, and listen long enough to understand the conversation. Assess what is happening before committing yourself to it. Once he understood the context, then he could go be the comedian.

A week later he found me and said, “Hey, Mr. José. That worked.”

I hadn’t taught Chris inhibition in the cafeteria. He already possessed the strategy. What he hadn’t recognized was that containing an attacker and entering a conversation were structurally similar executive problems.

I was the bridge.

That may be one of the most important roles of the trusted mentor in ADHD. The mentor doesn’t magically supply missing EF. They help the person recognize a capacity or strategy that already works brilliantly in one world and discover where else it might work.

Eventually Chris shouldn’t need me to point out the similarity. He should encounter another problem and recognize it himself: Wait. This is containment.

That’s when the strategy starts becoming portable.

Dr. William Dodson described something strikingly similar in correspondence with me. He framed ADHD not simply as an absence of ability, but as difficulty reliably accessing abilities when circumstances demand them.

That distinction matters enormously. If the capacity sometimes exists, the question changes from How do we install it? to Where can this person already access it—and how do we build a bridge from there?

Chris gives us one observation.

The hypothesis is much larger.

Before the Kitchen, There Was the Pitch

Gordon Ramsay gives us an intriguing hypothetical case.

The word hypothetical matters. I am not diagnosing Gordon Ramsay with ADHD. His biography gives us observations that allow us to ask what this model would predict if an ADHD-like developmental mechanism were present.

Ramsay has described a childhood marked by instability, repeated moves, his father’s drinking and violence toward his mother. He later described cooking as becoming an obsession and an escape from what was happening at home. (The Guardian)

But Gordon Ramsay did not arrive in the kitchen empty-handed.

Before cooking, there was football.

Ramsay’s accounts describe a serious pursuit of football with Rangers during adolescence before knee problems ended that trajectory. The details of exactly how far he progressed have been disputed over the years, so there is no need to build the argument on the mythology. What matters here is much simpler: football was a serious developmental pursuit for Ramsay, and losing it mattered to him. (The Guardian)

It may also have given him something valuable.

A scaffold.

For a kid living inside chaos, sport can provide a world whose rules make sense. Practice produces visible changes in performance, coaches provide immediate feedback, and competition creates consequences that arrive now rather than six months from now.

But the scaffold isn’t merely the coach or the exercise.

He wasn’t exercising alone. He was regulating in company.

Football surrounds the athlete with other nervous systems. Teammates train beside you, better players demonstrate solutions, and everybody’s performance affects everybody else’s. There is something remarkably close to body doubling built into the structure: you keep doing the difficult thing partly because everyone around you is doing it too.

There is soundboarding as well. Players talk through what happened, watch somebody else solve the same problem and try again. Competition supplies urgency without requiring the athlete to manufacture it internally. The coach matters, but the coach isn’t the whole scaffold.

The small group itself helps hold attention, effort and behavior in place.

Golf shows why this idea is larger than traditional team sports. The golfer ultimately stands over the ball alone, but development can still occur among coaches, playing partners and competitive peers who watch one another, compare decisions, compete and talk through problems.

What looks like an individual sport can still contain a small-group regulatory ecosystem.

If our hypothetical ADHD model applies to young Gordon, football was potentially doing several things simultaneously. Physical exertion may have provided acute regulation, while competition and other people helped organize engagement in the moment.

But years inside that environment may have done something more durable.

He was learning habits and EF that could serve him later.

Showing up prepared becomes normal. Repetition becomes how you improve rather than evidence that you’re bad at something. Correction becomes information. You learn to anticipate rather than merely react and to understand that your preparation matters because other people are depending on you.

At first, the environment demands those behaviors. Eventually, some of them become yours.

That is the deeper hypothesis behind learned EF. A scaffold can help someone perform while they’re standing on it. A developmental scaffold may do something more consequential:

It may help build capacities that remain after the scaffold is gone.

Then football disappeared, and eventually Ramsay walked into a professional kitchen.

Look at what was waiting for him there.

Another small group. The brigade.

The equipment had changed, but the social architecture hadn’t changed nearly as much. Once again there were defined roles, shared objectives, immediate feedback and immediate consequences. Somebody better was standing nearby. Individual performance mattered because other people depended on it.

Failure wasn’t an abstraction delivered on a report card three months later. Everybody knew immediately when somebody screwed up.

The kitchen therefore may have been new without being cognitively foreign. Ramsay wasn’t necessarily starting from zero. If football had helped him develop habits and EF inside one demanding performance ecosystem, the kitchen offered another environment in which some of those capacities could be repurposed.

And then there is the exercise itself.

The Carpenter Already Has a Hammer

In 2012, Yu-Kai Chang and colleagues randomly assigned forty children with ADHD either to thirty minutes of moderate aerobic exercise or to a sedentary control condition. The exercise group subsequently improved on specific measures of executive performance. Importantly for this story, Chang’s affiliation was the Graduate Institute of Coaching Science at National Taiwan Sport University. One of the early questions about exercise and ADHD executive function was being pursued from inside sport science. (PubMed)

That study did not prove that sport builds generalized EF.

It established something narrower and important:

Measured executive performance in children with ADHD can change after a single bout of exercise.

The literature has grown considerably since then. Meta-analytic evidence now supports beneficial effects of aerobic and other physical-activity interventions on inhibition, cognitive flexibility and working memory in children with ADHD. Recent work also suggests that the type of activity may matter: open, rapidly changing activities appear particularly promising for inhibition, while ball sports have shown advantages for working-memory outcomes in some analyses. That is important evidence.

But there is also a danger in asking only the question your existing framework has taught you to ask.

The carpenter already has a hammer.

ADHD medicine has an extraordinarily effective hammer in stimulant medication. So when exercise begins producing measurable effects, an understandable clinical question is where exercise belongs alongside established treatment.

Dr. Dodson’s view of exercise was more pronounced.

In correspondence with me, he described vigorous aerobic exercise as a powerful regulatory mechanism for some people with ADHD. His clinical observation was especially provocative when exercise disappeared: some patients who had functioned remarkably well became dramatically impaired after injury removed the activity that had been helping regulate them.

That observation resonates with me because I lived it long before I was treated. During graduate school, I exercised constantly. I didn’t know I was regulating ADHD; I just knew I functioned better when I did.

I found the regulation before I knew what I was regulating.

A clinical observation and a personal experience are not randomized controlled trials. They should not be presented as if they are. But neither should we throw them away when they suggest a testable question that the experimental literature has not yet fully answered.

What if exercise is not merely adding a little executive function to an otherwise unchanged ADHD nervous system?

What if, for some people, it is one of the things organizing the nervous system in the first place?

Now return to hypothetical young Gordon.

Football isn’t thirty minutes on a stationary bicycle followed by a Stroop test. He runs, competes, reads other players and inhibits premature decisions. Teammates body-double the work. Opponents create urgency. Coaches and teammates provide correction and soundboarding.

Then he goes home.

Tomorrow he does it again.

And he does that for years.

The experimental evidence gives us one piece of that system: physical activity can alter measured executive performance in children with ADHD. Dodson’s clinical observations suggest the stronger possibility that, for some people, exercise can become an important regulatory scaffold.

Our hypothesis goes another step.

During all those years of regulation, the athlete may also be acquiring habits and EF that outlast the acute exercise effect.

That is where football could matter to Ramsay later.

The exercise may have helped regulate the kid who went home that evening.

The sport may have helped build the adult who eventually walked into the kitchen.

That changes what the loss of football means.

Before the injury: I CAN be a footballer.

Afterward, something remained.

I COULD.

Not I could have been, as regret. I COULD as confidence.

He hadn’t merely discovered that he could become good at football. He had experienced the process of becoming good at something. He knew what practice felt like, what correction felt like, and had evidence that being bad at something today did not necessarily predict what he could become after thousands of repetitions.

His knee could take away football.

It couldn’t necessarily take away what football had built.

Then the kitchen could build on top of it.

Two Ways Out of the House

Ramsay’s younger brother Ronnie makes the story darker.

Ramsay has publicly described Ronnie’s progression into heroin addiction, repeated rehabilitation attempts and periods of incarceration. Ramsay himself characterized heroin as an escape that allowed his brother not to deal with reality. (The Guardian)

The comparison is irresistible, but it is also dangerous.

Two brothers coming out of the same troubled household are not a controlled experiment. They were not genetically identical. They did not have identical experiences, relationships or opportunities. Nothing allows us to know whether Ronnie carried a greater biological vulnerability to addiction or differed in any number of other critical ways.

Ronnie is not Gordon’s control.

This is not Picard and Shinzon.

The useful question is narrower: What happens when a kid carrying substantial adversity finds a high-stimulation escape that also builds capacity?

Football can make the rest of the world disappear for ninety minutes. So can a kitchen during service. But while the world disappears, the person may also be becoming better at something. The escape supplies relief while demanding adaptation.

The escape becomes the gym.

That doesn’t make sport or cooking treatments for trauma, and it doesn’t immunize anyone against addiction.

It gives us a developmental variable worth testing.

When the Kitchen Goes Dark

Because the kitchen can have another function entirely.

The same environment that allows one person to flourish may allow another person to hide. A hard dinner service consumes cognitive bandwidth. There is noise, movement, immediate problems and constant interpersonal contact. There isn’t much unused mental territory.

For someone carrying shame, trauma or relentless negative self-talk, that may provide something beyond engagement.

It can become difficult to hear yourself think.

Then service ends. The tickets stop. The burners go cold.

And your head comes back.

For some chefs, perhaps the party continues because the mask needs to continue.

The heat masks. The party extends the mask. The quiet removes it.

This is deliberately a hypothesis, not an explanation for substance use among chefs. Restaurant culture has its own pressures and substance-use norms. ADHD, trauma, social environment and individual biological vulnerability can all contribute through different pathways.

Those mechanisms can collide. We cannot look backward from addiction and know which ones were operating in a particular person.

Anthony Bourdain gives us a useful hypothetical case precisely because his story refuses to become tidy.

His history of heroin and cocaine use is well documented, but we do not know that Bourdain had ADHD, and his addiction cannot be reverse-engineered into an ADHD diagnosis.

His life instead gives us a question.

What if the heat sometimes does two jobs?

It can provide an environment in which a stimulation-seeking mind performs brilliantly. It can also provide somewhere not to be alone with yourself.

Those possibilities can coexist.

That’s the shadow cast by the same kitchen we’ve spent this chapter admiring.

I HAVE

Return to our chef.

Years have passed. The young cook isn’t trying to prove they can survive prep anymore. They’ve held stations, survived Saturday nights, screwed things up and recovered.

Eventually the evidence changes tense.

I HAVE.

I have done this. There is no longer anything hypothetical about competence.

And somewhere inside all those accumulated nights, another transition begins. Cooking isn’t merely something they love. Chef isn’t merely the occupation they successfully entered.

The profession has become part of the answer to a much larger question.

Who are you?

I AM

I AM a chef.

That is different.

I WANT described a desired future. I CAN made that future believable. I HAVE supplied autobiographical evidence.

I AM is self-image.

And identity can carry behavior when novelty cannot. The chef doesn’t need to wake up excited about maintaining a knife. They maintain it because that’s what chefs do. Mise en place doesn’t need to be fascinating every afternoon.

This is simply how their station exists.

The mundane behavior no longer has to renegotiate its importance every morning. Identity carries some of the load.

But identity creates another problem.

When something moves from what I do to who I am, losing access to it threatens considerably more than employment. An athlete can lose the body that made the identity possible. A singer can lose the voice. A pilot can lose medical clearance.

Sometimes the world supporting an I AM disappears long before the identity is prepared to follow it.

That’s another behavioral ice core.

Chefs often get something those people may not.

A runway.

Leaving the Heat

Nobody can work Saturday-night service forever.

At twenty-five, the heat may be the point. The printer starts screaming, somebody is buried on sauté, a server has just remembered an allergy that should have been mentioned ten minutes ago, and suddenly every neuron in the chef’s head knows exactly where it belongs.

At fifty, the chef may still love that world without needing to stand in its center every night.

That isn’t losing the passion.

That’s learning how to land it.

The professional kitchen offers an unusually long runway. The chef can move from station to kitchen, then from running one kitchen to overseeing several. The hands that once had to touch every plate can begin developing the people who touch them instead. Restaurants can lead to consulting, teaching, television, books or mentorship, while family life gradually occupies more of the runway.

None of that requires the chef to stop saying I AM a chef.

Something healthier has happened.

Chef is no longer the only answer to the question.

That is the difference between losing an identity and expanding one. The chef doesn’t have to crash out of the passion singularity. The intensity can step down in stages while the identity survives.

The plane can land softly.

And perhaps this is where another kind of bridge becomes important.

The trusted person who helps an adolescent recognize a capacity in one compartment may have an adult counterpart. A spouse, partner or close friend can sometimes see that the person who organizes a kitchen, company or performance with extraordinary skill isn’t bringing those same capacities home.

The partner doesn’t supply the EF.

The partner can be the bridge.

A healthy partner is not an executive-function prosthetic. They are not responsible for regulating another adult’s life. But someone who knows us intimately can sometimes recognize a capacity we have compartmentalized so completely that we don’t recognize it ourselves.

You already know how to do this. You do it every day over there. This is the same problem in different clothes.

That is Chris in the cafeteria again, only now the bridge may run from restaurant to marriage, company to family, stage to ordinary Tuesday afternoon.

Eventually the goal is the same.

The person learns to recognize the bridge themselves.

For the chef leaving the heat, that may be enormously important. A life that was once organized almost completely around service has to make room for relationships, health, family and quiet.

The challenge is no longer learning how to become the chef.

It is learning how to remain the chef without requiring the kitchen to remain the center of everything.

What the Kitchen Builds

Go back to the kid in the first kitchen.

They were making dinner at home and discovered something small but consequential: I’m good at this.

Nobody standing there could see where that observation might lead. Certainly nobody could see the thousands of onions, burns, corrections, ruined sauces, Saturday nights and impossible services separating that kid from the chef.

But that’s the point.

The passion singularity didn’t arrive fully formed. Neither did the EF.

Both were built.

The kitchen first gave the kid somewhere their brain wanted to be. Then it demanded things from them in exchange for staying there. Repetition became discipline. Failure became information. Mundane work acquired meaning because it belonged to something larger.

Eventually the kid didn’t merely become good at cooking.

Cooking helped build the kid.

And perhaps the final lesson the kitchen has to teach is the one nobody thinks about at the beginning.

The place that builds you does not have to own you forever.

Someday another young cook will be standing at the station getting buried exactly the way you once did. You’ll see the panic before they say anything because you’ve been there. You’ll know which correction they need and which one can wait.

Then you’ll go home.

Maybe somebody you love is waiting for dinner.

And for once, you’re not cooking it.

The heat built you. You learned how to leave the heat.

And you are still the chef.

A Note on the Hypotheses

The passion singularity, the progression through I WANT, I CAN, I HAVE and I AMI COULD as retained confidence, learned EF, the small-group regulatory model and the Bridge are proposed constructs developed in this work.

The Gordon Ramsay and Anthony Bourdain discussions are hypothetical applications of those constructs. Neither man is being retrospectively diagnosed with ADHD.

The exercise literature supports effects of physical activity on measured executive-function outcomes in children with ADHD. It does not establish that years of competitive sport create generalized learned EF, that executive strategies automatically transfer from sport into ordinary life, or that body doubling and soundboarding are the mechanisms responsible for those effects. Those are testable predictions of the model.

And that distinction matters.

The observations give us the ice cores. The hypotheses tell us where to drill next.
